It seems so risky to see someone who is a known cop.

It's nice to have a community of sleuths who can read between the lines.

The headline I saw said that he was texting with a "prostitute". Then the headline changed.

Investigations typically take a lot longer.  As to why a provider would see a cop, I can think of possible reasons like he's blackmailing her.

Nothing in the story says any money was exchanged.  Seems like they're just fucking during business hours.
