Assuming that you haven't seen the provider of choice before, you will be paying for her time to be your companion, plus any associated expenses (food&drink, entertainment, etc.).  So assuming you have a couple hours for dinner, a couple hours for the show, and an hour or two in private, you're looking at a 5+ hour session.  Some might have special rates for a mix of public/private time.  I think it helps to have some chemistry so both of you don't feel uncomfortable during the entire time.  A few providers have a meet&greet option/rate so you can sit and chat in public for a while to see if you can build that chemistry.

But you're definitely going to have to compensate her for her time.  I'm pretty sure most provider's discounted rates for extended time beyond an hour or two take into account that you won't be spending the entire time in your room.

I did a dinner/show date with a provider (who I'd seen twice already on my previous trip) the first time because like you, I always wanted to try it.  Had so much fun on that date, took her on another dinner/show date about a half a year later, had so much fun on THAT date, I only do dinner/show dates with her now.

I always do dinner date, but no show. Once I wanted to go to a show, but noticed that she was not very keen on that. After our nice meeting (dinner and room) she told me that she saw this show for more then 10 times (it gets boring) with clients. So now I suggest fun-dinner-fun- bar and good bye. Have fun.
